Spicy Coconut Soup Recipe

Thai is one of my favorite cuisines. I love the juxtaposition of spicy and sweet and how the flavors always tingle my taste buds. While in Thailand last year, I made sure to take a Thai cooking class. While I already cooked Thai food at home, the class at the Four Seasons Chiang Mai was a great opportunity to take my Thai cooking to the next level; the time spent in the open outdoor kitchen has become one of my fondest memories of Thailand. Every time I cook homemade Thai at home, it transports me back to that kitchen overlooking the lush tropical landscape. Today, I want to share with you one of my favorite (and easy) Thai recipes.

SPICY THAI COCONUT SOUP

SPICY THAI COCONUT SOUP

Ingredients

  • 2 teaspoons canola oil
  • 1/2 cup chopped red bell pepper
  • 4 teaspoons minced peeled fresh ginger
  • 4 garlic cloves, minced
  • 1 (3-inch) stalk lemongrass, halved lengthwise
  • 2 teaspoons ground fresh chile paste
  • 3 cups Chicken Stock or fat-free, lower-sodium chicken broth
  • 1 1/4 cups light coconut milk
  • 4 teaspoons fish sauce
  • 1 tablespoon sugar
  • 2 cups shredded cooked chicken breast (about 8 ounces)
  • 3 tablespoons chopped fresh cilantro
  • 4 limes for juice
  • 1 package kelp noodles
  • FOR CHICKEN:
  • 8 ounces chicken breast
  • 1 tablespoon garlic powder
  • ½ tablespoon turmeric powder
  • 1 teaspoon salt
  • 1 tablespoon pepper

Instructions

  1. Heat a Dutch oven over medium heat.
  2. Add oil to pan; swirl to coat.
  3. Add the bell peppers, ginger, garlic and lemongrass; cook 3 minutes, stirring occasionally.
  4. Add chile paste; cook 1 minute.
  5. Add Chicken Stock, coconut milk, fish sauce, and sugar; bring to a simmer.
  6. Add lime juice; reduce heat to low, simmer for 10 minutes.
  7. While soup is simmering, set oven to 350F. Coat chicken with garlic powder, turmeric, salt, and pepper bake for 30 min (or until thoroughly cooked through). Shred then add to soup before serving.
  8. Add kelp noodles about 15 minutes before serving to soften them.
  9. Add chicken to pan; cook 1 minute or until thoroughly heated.
  10. Discard lemongrass.
  11. Top with cilantro, and squeeze a half of one lime into soup before serving.
