Thai is one of my favorite cuisines. I love the juxtaposition of spicy and sweet and how the flavors always tingle my taste buds. While in Thailand last year, I made sure to take a Thai cooking class. While I already cooked Thai food at home, the class at the Four Seasons Chiang Mai was a great opportunity to take my Thai cooking to the next level; the time spent in the open outdoor kitchen has become one of my fondest memories of Thailand. Every time I cook homemade Thai at home, it transports me back to that kitchen overlooking the lush tropical landscape. Today, I want to share with you one of my favorite (and easy) Thai recipes.
